The you once said that the Java-based one was a bear to operate with VO. So 
it seems that if I get a Mac Book, and I'm going to the trouble to learn a 
whole new O.S. and its keystrokes in the first place, wouldn't the first of 
those two you list above fit the bill? And does it come preloaded with a new 
Mac Book, instead of having to be purchased?

Both iwork and open office have what you are looking for, open office is a 
java based program, it's keyboard commands actually are similar to Microsoft 
Word rather than standard mac keyboard commands.
