Hello Christopher:
My most strong recommendation is to stick with Outlook Classic and not to waste any time on what Microsoft calls the New Outlook. This is the best way, right now, for you to be of most benefit to the people you are training.

I am going to be working with someone who is a Jaws user and was wondering what everyone's thoughts were about the changes that it may have versus outlook classic?
I am going to switch another computer that is not primary but before I do so any thoughts would be appreciated such as experience with Jaws, navigation etc.
