As someone already suggested earlier, volunteer for an agency doing
assistive technology training in your area.  This will give you some
valuable experience, no matter what your major/minor.  I did this for
over 3 years.  I'm certain that experience, along with some other
volunteer work led to my current job.  Although I don't work exclusively
with assistive technology, I will be able to help the computer teacher
work with her students.  Good luck to you.
