There are plenty of good recording schools. I'm not sure how accessible 
their curriculum is since they probably train their students on a broad 
range of gear instead of just focusing on the choices that get the job done 
from an accessibility standpoint. I would suggest you go find a fulltime 
professional engineer in your area and try to shadow him for a day. Chances 
are he'll be so flattered that someone is interested in his talent that 
he'll give you a bit of mentoring for the price of lunch. I'd say learning 
through books and equipment manuals is faster, cheaper and more to the point 
than going to an  educational institution but different strokes are for 
different folks. There really is a lot of published material on the subject 
of recording technology and theory though.
