For new iPhone and iPod Touch users, a good resource is the accessible 
version of the iPhone user's guide:

The same URL (without "voiceover/" at the end), is given as a Safari 
bookmark for new models of the iPhone 3GS (but not on the iPod Touch), 
but we've discovered that you can't can't use VoiceOver gestures to do a 
three-finger swipe to read past what's shown on the screen with this 
version of the guide.  Consequently, you won't be able to access any 
entries beyond what you can directly touch on the first page (e.g. 
"Photos" is the last entry you can double tap and read).  Even through 
you can have VoiceOver read below this entry (with a two finger  flick), 
you can activate any links below "Photos".

So I would either delete the existing user guide bookmark that points  to:
http://help.apple.com/iphone/
and add one that points to:
http://help.apple.com/iphone/voiceover/
or else put an icon to the accessible version of the iPhone user guide 
on my home screen (or both).

The easy way to do this is to read a mail message with a link to this 
page and open the link on your iPhone.  (For example, the 
<http://help.apple.com/iphone/ > link only opens onto the Mobile version 
of the user guide if you  view this link on your iPhone or iPod Touch; 
if you open it on your  computer it will point to the Apple Manual pages 
where you can  download a PDF version of the iPhone User's Guide.)

Once you have opened the guide in Safari on your iPhone or iPod Touch, 
double tap the "Utilities" button at the bottom of your screen, just 
above the "Home" button.  Double tap either the "Add Bookmark" button to 
add the guide as a bookmark to Safari, or  double tap the "Add to Home 
Screen" button if you want to add an icon to access the user  guide from 
your home screen.

I added the sections of the iPhone User's Guide that deal with 
accessibility as an icon on my Home Screen by sending myself a mail 
message with the link:

opening the link in Safari from Mail, and then using the "Utilities" 
button in Safari to "Add to Home Screen".

If you only want the sections on VoiceOver, you can use:
http://help.apple.com/iphone/3/voiceover/en/iphddd0db38.html
as the URL you save as an icon.

The section on VoiceOver gestures and the second section on using the 
rotor are particularly useful to have handy while you're learning your 
way around your iPhone or iPod Touch.  Follow the instructions to use 
the practice area for gestures  under Settings > General > Accessibility 
 > VoiceOver > Practice Gestures.  As a tip, the first time I tried to 
get to the Accessibility menu, I didn't know the gesture for scrolling 
down the "General" page and was having problems doing the three-finger 
swipe up to scroll down the page once I found it.  When I was first 
exploring the iPod Touch, using the two finger flick down, to have 
VoiceOver read everything from the current focus proved invaluable, 
since this gesture also scrolls down pages, and you can stop the action 
with a two finger tap.  (Then you can find the  item you want by touch).
