I haven't used GMail with either interface.  But generally access keys are 
alt-letter or alt-number combinations.  With Window-Eyes, they only work 
while Browse mode is turned off.  The analogous condition in JAWS would be 
that Forms mode would need to be on.  How this works in JAWS 10, I don't 
want to guess.
