Laura,
I second Beth's suggestion. I subscribe to that mailing list myself, and
although it's a light traffic list, there are a number of skillful Open Book
users on it and it will make the perfect place for you to get this stuff
together. I appreciate how frustrated you feel at the moment, but what
you're experiencing isn't really indicative of how Open Book works, at all.
There's something you must be missing, something that's going wrong but you
have no way to know what it's supposed to be like. And by the way, the help
documentation in Open Book is pretty systematically and articulately
presented, too, but you seem not to have even realized that there's a menu
line and all sorts of interface things. It isn't very much like Jaws at all,
but presents more like a Windows application, and there just isn't any
connection in terms of software culture between it and Jaws. It's the
product of a company called Arkenstone, which sold Open Book to Freedom
Scientific and, well, join that mailing list and start asking questions.
It'll all start working out soon enough and you'll get underway.
