The IPod Shuffle is the easiest one to use by a blind person, but it only holds up to 1 GB, which isn't much these days.
You also have the problem of using ITunes to load music onto it, and I doubt you'll manage to download music from ITunes either, as it's anything but speech friendly.
That's the bad news, the good news is much better.
If you own any other model of IPod, or even certain models of mp3 players, you can now install speech onto them.
This means that you can ignore ITunes, and just simply plug your IPod or MP3 player into the computer and see it as another drive.
You can then copy all your music folders and MP3 books onto it with Windows Explorer.
With the Rockbox speech installed, all menu options are spoken, and you can have both your albums and song tracks spoken to you as well.
I've had an IPod for 2 years now, and it was a hit and miss affair to get it to work, but now it's a dream.
The Rockbox speech is open source so it's free, but you must bear in mind that it's still in beta, so you have to accept crashes now and again till it becomes better.
You can visit the Rockbox website at the following link
www.roxbox.org
but I suggest you visit Brian Hartgens site first, as he has put together a great page on how to install Rockbox.
