Hi Michelle,
I use ABBYY Finereader with the Fujitsu FI-5220C. This is a combo scanner that has a flatbed as well as a document feeder. The document feeder is a duplex scanner, so it scans both sides of the page at a time. This scanner can also be set to
automatically stop if two pages are pulled through the ADF at the same time. I had a little trouble setting it up initialy, but I was able to do it without sighted assistance. I have found Abbyy Finereader to be very accessible. I compared it with OmniPage
15, and Abbyy did the best job at recognizing the particular pdf I used for the test. I have not tried Omnipage 16. Kurzweil will let you use either the Abbyy OCR engine or the Omnipage OCR engine, but it costs about as much as both of these together,
