[Ag-eq] Apples

The apple harvest is rolling in, and they are tasty.

Does anyone know a quick way to preserve apples in a condition so they can
be used later for pies or cakes?  This seems to require that they be cored,
peeled and sliced.  I have the do-hicky that one presses down on an apple,
and it cores the apple and slices it thickly, but they need to be sliced
further and peeled.  This weekend, it took me about 90 minutes to process 10
apples or so for pie.  I'm slow, I guess.

I have read that apples can be cored and frozen whole after that, but I
don't really have freezer space for a lot of whole apples, and I think
peeling might be easier while the apples are crisp, which they probably
won't be after being frozen.

Anyway, if anyone knows a better way to deal with apples and still keep them
chunky, I'd like to hear it.

Applesauce is the easiest, but I also want pie!
